Steelhead Trout with Herbs and Olives
serves 4

Ingredients

Instructions

  1. Mix together the olive oil, zest, capers, dill, parsley, and thyme. Season to taste. Place the trout on a parchment paper-covered sheet pan, then cover the trout with the mixture.
  2. Toss the olives with 1t olive oil and the rosemary and place beside the trout on the sheet pan.
  3. Bake at 375 until the trout has reached an internal temperature of 145 degrees.
  4. Garnish with lemon juice, plate and serve hot.
