Steelhead Trout with Herbs and Olives
serves 4
Ingredients
- 1 ea steelhead trout fillet
- 1/4 C olive oil
- 1 T lemon zest
- 1/4 C capers, drained
- 2 T dill, chopped
- 2 T parsley, chopped
- 1 t thyme, chopped
- 1 C olives, mixed
- 1 t rosemary, chopped
Instructions
- Mix together the olive oil, zest, capers, dill, parsley, and thyme. Season to taste. Place the trout on a parchment paper-covered sheet pan, then cover the trout with the mixture.
- Toss the olives with 1t olive oil and the rosemary and place beside the trout on the sheet pan.
- Bake at 375 until the trout has reached an internal temperature of 145 degrees.
- Garnish with lemon juice, plate and serve hot.
